Without a sensor you simply have to leave the tumble dryer until you think it will have dried the clothing enough but with a sensor it can tell when the clothing is dry and stop drying which saves time and electricity.
The sensor measures the humidity of the air in the tumble dryer as tumble dryers expel moist air to dry the clothes and so if there is no moist air in the tumble dryer then the clothing must be dry. Some older appliances with a sensor could have problems if some of the washing was dry and others not but the modern sensor tumble dryers are much better at measuring the dryness of the whole wash.
